Ice Machine Sanitation

In response to the potential for infectious agents in ice machines, the following are important to remember:

  • Ice machines are not the originating source of infectious agents.
  • Infectious agents can be introduced into ice machines from external sources, such as building water supplies.
  • It is possible for infectious agents that are introduced into an ice machine to end up in the ice that is produced.
  • Diligent attention to cleaning and sanitizing is important to peak performance and delivery of clean, sanitary ice.¬†Follett equipment should be cleaned and sanitized according to Follett instructions. These instructions can be found in the service manuals for the machines in question, or web-based video training modules.
  • If environmental conditions require, machines should be cleaned more frequently than recommended minimums. Such environmental conditions would include the presence of infectious agents in the water supply.

  • Design, testing, and certification of Follett equipment to NSF International standards for “materials, design, construction and performance of automatic ice making equipment and related components that are used in the manufacturing, processing, storing, dispensing, packaging, and transportation of ice intended for human consumption. This includes NSF certified in-place-cleaning procedures for the ice machines.
  • Introduction of antimicrobial components in 2011 and 2012 for new and existing ice and water dispensers and ice machines to inhibit the growth of bacteria and other organic material on treated parts.
  • Introduction of carbonless particle filtration in January 2014 to provide the protection of fine particle, cyst, and asbestos capture without removing disinfection agents from the local water supply.
  • Introduction of Symphony Plus dispensers in October 2014 with automatic self-flushing of the ice machine after every one hour of compressor run time, a shut-down routine that has the condenser fan run for 10 minutes after the compressor turns off to reduce internal cabinet temperatures to ambient, and one-hour semi-automatic cleaning and sanitizing to make cleaning and sanitizing easier.
  • Cleaning and sanitizing videos for both Symphony and Symphony Plus models to help encourage more cleaning and sanitizing.
